過節糕點香味誘人

要烹調出美味的芋頭糕,材料的比例必須拿捏得準確,否則不是粘米粉太多,導致糕身太軟,就是強烈的胡椒粉味遮蓋芋頭的香味。Ken料理的芋頭糕材料比例恰到好處,糕身結實,經攪拌的芋頭粒和粘米粉等混合一起,食起來既有「噉噉芋頭」的口感,亦有冬菇的香味。過農曆新年不妨試一試,材料易準備,烹調方法也簡單。


芋頭糕
材料:
芋頭粒          900克
金針菇           2包
素火腿粒       60克
冬菇粒         100克
薑米             適量
粘米粉         300克
澄麵             75克
開粉水         600克
煮芋頭水     1,200克

調味料:
                 2茶匙
蔬菜精華    3茶匙
                 2茶匙
麻油             適量
胡椒粉         適量
五香粉         2茶匙


                                                                                 

做法:
  1. 將金針菇切小段弄散,炸至金黃,盛起備用。
  2. 粘米粉及澄麵倒入一個容器中,拌勻後加入600克開水拌勻成粉漿備用。
  3. 燒熱鍋下油,下薑米爆香後加入冬菇粒、素火腿粒炒香,盛起備用。然後下芋頭粒炒香後加1,200克的水及所有調味料,煮至芋頭少許軟身,然後加入所有配料小煮一會,關火。
  4. 將步驟2的粉漿加入3中,然後用手提打蛋器攪拌至粉漿與芋頭等混合呈杰身。
  5. 將步驟4倒入已掃油的容器中,中大火蒸約1小時15分,完成。

温馨提示:輕身的芋頭品質較好。芋頭糕需待冷卻煎時才不會碎。芋頭容易導致脹氣,消化能力差的人,不宜食太多;進食芋頭時,避免飲過多的水,影響消化。

Taro Cake

Ingredients:
900g  diced taro
2 packs golden needle
60g diced vegetarian ham
100g diced dried shiitake mushroom
A suitable amount of finely diced ginger 
300g rice flour
75g  wheat starch
600g water for rice flour
1,200g water for cooking taro

Seasonings:
2 teaspoons salt
3 teaspoons vegetable essence
2 teaspoons sugar
A suitable amount of sesame oil and pepper
2 teaspoons five spice


Steps:
  1. Cut the golden needle into small pieces. Deep fry to become golden brown. Set aside.
  2. Put the rice flour and wheat starch into a large bowl and mix well. Add in 600g water and mix thoroughly to become paste. Set aside.
  3. Heat the pan and add in oil. Put in ginger and fry briefly. Add in mushroom and vegetarian ham and stir fry. Remove from the pan and set aside. Put in taro and stir fry briefly. Add in 1,200g water and all the seasonings. Cook until taro becomes a little softened. Then add in the golden needle, mushroom and vegetarian ham and cook for a short while. Remove from heat.
  4. Add in the paste of step 2 into the cooked ingredients of step 3. Use a hand electric egg whisk to mix them well enough.
  5. Pour the mixture of step 4 into a oil-brushed container. Steam with medium to high heat for 1 hr. and 15 mins. 
Tips:
  1. Choose light weight taro.
  2. Wait until the steamed taro cake is completely cool before cutting them into pieces and fry.
  3. Don't eat too much if your stomach is not in good condition since taro tends to distend your stomach.
  4. And don't drink too much water when eating taro cake which will lead to poor digestion.
