趣脆燕麥海苔紫菜甘筍白玉球
材料(2人份):
硬豆腐 1磚
燕麥 1湯匙
金菇 1/2包
細甘筍 3條切粒
紫菜 數片
蕎麥芝麻海苔 6茶匙
香茜碎末 1湯匙(視乎喜好)調味料:
生粉 2茶匙
黃糖 1茶匙
醬油 2茶匙
麻油 少許調味芡汁:
醬油膏 1湯匙
醬油 1湯匙
麻油 1/2湯匙
黃糖 2茶匙
生粉 1湯匙
水 1/2碗,攪拌均勻
食材處理及製作︰
硬豆腐壓碎,倒入燕麥片,搓成泥狀,放約20分鐘;
取出數片紫菜剪成碎條,金菇切成小段,甘筍切粒,香茜切碎;
將金菇、甘筍粒、蕎麥芝麻海苔、紫菜碎條,放入豆腐燕麥,攪勻;
倒入調味料,搓勻;
加香茜,以手搓勻,之後取出部分放在掌心搓成小球,在小球上撲點生粉;
猛火熱鍋放油,放入豆腐球,轉中火,炸至金黃色,撈起,待用;
熱鍋,倒入調味芡汁,略滾後倒入碗中;
把炸好的豆腐球放在盤上,加上煮好的調味芡汁,撒點芫茜伴碟,完成。
Crispy Oatmeal Seaweed Nori Carrot Tofu Balls
Ingredients(serves 2):
1 block of firm tofu
1 tbsp oatmeal
1/2 a pack of enoki mushrooms
3 baby carrot cut into small pieces
A few nori sheets
6 tsp buckwheat sesame seaweed
1 tbsp minced coriander (adjust the quantity to your taste)Seasonings:
2 tsp cornstarch
1 tsp brown sugar
2 tsp soy sauce
A drizzle of sesame oilSeasonings for the sauce:
1 tbsp soy paste
1 tbsp soy sauce
1/2 tbsp sesame oil
2 tsp brown sugar
1 tbsp cornstarch
1/2 a bowl of water, mix everything together
Ingredient preparation and cooking steps:
Mash the firm tofu. Add the oatmeal. Combine well by hand. Let stand for 20 minutes.
Cut a small nori sheet into fine strips. Slice the enoki mushrooms into small sections. Dice the carrot. Mince the coriander.
Add the enoki mushrooms, carrot dices, buckwheat sesame seaweed and nori strips to the tofu oatmeal mixture. Give it a good mix.
Add the seasonings and mix well.
Add the coriander. Mix well by hand. Place a portion of the mixture on your palm and shape into a small ball. Dust each ball in a little bit of cornstarch.
Heat the wok over high heat. Pour in the oil for deep-frying. Gently lower the tofu balls into the oil. Reduce to medium heat. Deep-fry until golden. Take out.
Heat a wok. Pour in the seasonings for the sauce. Bring to the boil. Transfer the sauce to a bowl.
Lay the deep-fried tofu balls on a plate. Pour over the sauce. Garnish with a sprinkle of minced coriander. Ready to serve.
