又是過年過節時分,家人團聚時,和家人一起分享這款湯,是你送給家人的溫馨禮物。材料中的鹿茸菌有護肝解毒的作用,紅棗、杞子、淮山和蓮子則有助滋陰健脾養肝補血。因而此湯又稱 「健脾補血養肝湯」 。
鹿茸菌羊肚菌燉湯
材料(8人用):
鹿茸菌 18g(浸水20-30分鐘)
羊肚菌 大的6-8粒(浸軟洗淨)
亁冬菇 5-6隻(浸水後約用90g)
杞子 40粒
紅棗 大的5-6粒(大粒)
鮮淮山 170g(已去皮)
乾百合 40片(洗淨浸10分鐘)
蓮子 40粒(去芯洗淨)
薑 4-5小片
鹽 適量
做法︰
將所有材料放入燉盅內加 2 升水。
取鍋,把燉盅放入鍋內注適量水入鍋,用大火煲滾轉中細火,燉兩小時即可。
Dried Velvet Mushroom and Morel Soup
Ingredients (serves 8):
18g dried velvet mushrooms (soaked in water for 20-30 minutes)
Approx. 6-8 morels (soaked until soft and rinsed)
5-6 dried shiitake mushrooms (roughly 90g after soaking in water)
40 pcs goji berries
5-6 big jujubes
170g fresh Chinese yam (peeled)
40 pcs dried lily bulb petals (rinsed and soaked in water for 10 minutes)
40 lotus seeds (with the green stems inside removed and rinsed)
4-5 small slices of ginger
A pinch of salt
Steps︰
Place all the ingredients into a stew pot. Add 2 litres of water.
If necessary, add more water to cover the ingredients. Bring everything to the boil over high heat. Then reduce to low heat. Simmer for two hours. Ready to serve.
