善用美味冬菇蒂

冬菇蒂本身是美味的食材,因為它口感香醇,但是它卻經常被丟棄,部分原因是它烹調的時間比冬菇傘長。今期綠色媽媽林麗珊為大家介紹的這款冬菇素扒,以冬菇蒂為主要材料,配上幾樣纖維豐富的蔬菜及果仁而成,烹製過程並不複雜。

冬菇蒂素扒

材料︰

冬菇蒂 120克

任何蔬菜 100克

果仁碎 30克

未經漂白的麵粉 5 湯匙

少許清水

調味

豉油 1湯匙

薑蓉 1茶匙

麻油 1湯匙

海鹽 ¼ 茶匙

黑胡椒粉 ½ 茶匙

做法︰

  1. 冬菇蒂預先浸水至軟,再撕成絲狀備用。
  2. 將撕成絲的冬菇蒂、切碎的蔬菜、果仁放入容器中和調味料拌勻,再把麵粉倒入和少量清水拌勻。
  3. 熱鍋放適量油,把步驟 2 的材料分成小塊,以中火煎至金黃色便可。

 

 Mushroom Stalk Vegetarian Steak

Ingredients:

120g dried mushroom stalk

100g any kind of vegetables

30g ground nut

5 tablespoons unbleached flour

a dash of cold water

Seasonings:

1 tablespoon light soy sauce

1 teaspoon ginger paste

1 tablespoon sesame oil

¼ teaspoon sea salt

½ teaspoon black pepper

Steps:

  1. Soak the mushroom stalk until tender and tear to become very fine strips.
  2. Put the mushroom stalk strips, minced vegetable and ground nut into a mixing bowl. Add in all the seasonings and mix well. Then put in the flour with a dash of cold water and mix again.
  3. Heat the pan and add in some oil. Divide the mixture of step 2 into small portions. Fry in medium heat until golden brown and serve.
