家庭式易做 Pizza

臨近新春一家歡聚!這個香草薄餅最受小朋友歡迎,師傅特別設計成小巧的尺寸,甜甜酸酸的味道更是特別醒胃。這個薄餅做法簡單,把麵糰發酵好,加上喜歡的餡料稍焗即成,而為了方便家中沒有大焗爐的,還可採用蒸的方法,很適合在家操作。剛焗( 蒸 )好的薄餅,麵糰中帶有淡淡的香草味道,加上各種繽紛的配料和醬汁,熱騰騰的吃下去,滋味實在令人回味無窮。

 

彩椒素意式薄餅

材料(10 個分量 )︰
低筋麵粉 50 克
高筋麵粉 450 克
雜香草 少許
依士( 酵母 ) 4 克
鹽 2 克
糖 30 克
固體菜油 30 克
水 250 毫升

配料 ︰
罐頭菠蘿
番茄醬
紅、黃、青椒
沙律醬
車打芝士碎

用具 ︰
4 寸紙模 10 個

 

 做法︰

  1. 將所有麵粉、依士及雜香草拌勻,堆成圓圈狀,中央留空間。把鹽、糖和菜油放到中央位置,逐少加水攪拌至三者完全溶化,把全部材料搓成麵糰。
  2. 以保鮮膜覆蓋麵糰表面避免風乾,放在室温 15 分鐘。之後把麵糰分成 10 分,捏成 4 寸左右的圓餅狀,放到紙模裏。
  3. 用鑊燒水至 40 度攝氏後熄火,把步驟 3 的麵糰放在碟或蒸籠上,蓋上鍋蓋,以蒸氣焗 15 至 20 分鐘待麵糰發酵至鬆軟。
  4. 在薄餅表面塗上番茄醬,隨意加入彩椒及菠蘿等配料,加上沙律醬和芝士碎,放進焗爐以 200 度預熱 1 分鐘,焗 15 分鐘即成。

 温暖提示︰可把手放進水裏測温,手能感到温熱,不覺燙手,便是 40 度的水温。

 

Vegetarian Pizza

Ingredients (10 piecess) :
50g cake flour
450g bread flour
A suitable amount of mixed herbs
4g yeast
2g salt
30g sugar
30g solid vegetable oil
250ml water

Stuffing:
Canned pineapple
Tomato paste
Red, yellow, green bell pepper
Salad dressing
Shredded cheddar cheese

Tool:
10 pieces 4in paper mold

Steps:

  1. Mix the two types of flour, yeast and herbs together. Pile to become a donut shape with a hollow in the centre. Put salt, sugar and oil in the centre. Gradually add in water and stir to dissolve. Knead all together to form dough.
  2. Wrap the dough with plastic film to prevent become dry. Place under room temperature for 15 minutes. Divide the dough into 10 pieces and knead each one to form a 4 inches round flat shape. Put them into the paper molds respectively.
  3. Boil the water in a pan to become 40°C and turn off the heat. Put the molds into the steamer inside the pan. Cover and steam for 15-20 minutes with until the dough swells and turn soften.
  4. Spread tomato paste onto the pizza. Then place the bell peppers, pineapple and other stuffing on them. Add in the salad dressing and cheese. Put them into a 200°C preheat (1 minute) oven and grill for 15 minutes.

Tips: You can use your hand to test the temperature of the water. If you feel lukewarm, that's fine
