素食者也會心心念念茹素前與家人同吃家常飯菜或餐廳的小炒!其實,只要稍作材料轉換,就變成素版本,依然可以滿足口腹,又拉高情緒價值!推介大家做這個「素版茹香茄子」,實驗證明食飽了都不知道是食素!但同樣香口美味,完美交融。
茹香茄子
材料(約2人份):
粗大茄子 1條
素肉魯 100g
薑末 適量
芫茜 適量調味汁:
素蠔油 1湯匙
醬油 1/2湯匙
糖 少許
麻油 1茶匙
生粉水
做法︰
把茄子頭頂切去,切成粗長條狀,沖洗,浸水,加鹽(避免氧化轉黑)。放鍋前先撈起搾去水分;
熱鍋下油,放入薑末炒至金黃色;
倒入解凍的素肉魯,炒香,備用;
熱鍋放油,放入茄子,中火快手炒約三、五分鐘;
倒入炒香的素肉魯,炒勻。倒入調味汁,再炒勻;(如果覺得太黏稠,可加少許水再略炒);
上碟前放上切碎的芫茜略炒勻,上碟後再灑上少許新鮮芫茜,完成。
Eggplant with Vegan Minced Pork
Ingredients(serves 2):
1 big eggplant
100g vegan minced pork
A pinch of minced ginger
A handful of corianderSeasoning sauce:
1 tbsp vegetarian oyster sauce
1/2 tbsp soy sauce
A pinch of sugar
1 tsp sesame oil
cornstarch water
Steps︰
Chop off the stem of the eggplant. Slice the eggplant lengthwise into thick strips. Rinse and soak in water. Add a pinch of salt (to prevent the eggplant from browning because of oxidation). Remove the eggplant strips from the water and squeeze out as much water as possible.
Heat a wok. Add a lug of oil. Add the minced ginger and stir-fry until golden.
Add the defrosted vegan minced pork. Stir-fry until fragrant. Set aside.
Heat the wok again and add another lug of oil. Stir-fry the eggplant quickly over medium heat for around 3-5 minutes.
Add the stir-fried vegan minced pork. Give it a good mix. Pour in the seasoning sauce. Stir-fry further and toss well. (If the sauce is too thick, add some water, then stir-fry briefly.)
Sprinkle with a handful of minced coriander. Stir-fry to mix well. Dish up and garnish with a little bit of fresh coriander. Ready to serve.
