斯里蘭卡 地道薯餅

素食者有不同類型。有一類型的素食者是不單不吃一切肉類,並且謝絕五辛:蒜、蔥、薤和興渠。有的素食者是不吃和不使用含有動物成分的產品或食物。另外一類的素食者是只不吃一切肉類,但這類型的素食者不排斥吃少量五辛。Malathi Karunadasa 女士今期介紹的這款斯里蘭卡地道薯餅,不含加工材料,但含有少量五辛,如果讀者不食用五辛,烹調時可將它們抽起。

 

薯餅

材料︰

薯仔 2 個

紅蘿蔔 半條

青豆 1 把

紅洋葱 少許

大蒜 少許

蔥 少許

薑 少許

青辣椒 少許

麵粉 少許

麵包糠 少許

 

調味︰

豉油 2 湯匙

豆蔻 少許

肉桂 少許

咖喱葉 少許

做法︰

1. 將薯仔煮熟,壓碎成薯泥,放在碗裏待用。紅蘿蔔切粒。

2. 紅洋蔥、大蒜、蔥、薑、青辣椒、咖喱葉等切碎。

3. 熱鍋燒熱兩茶匙油,爆香步驟 2 的材料。

4. 放入青豆、切粒的紅蘿蔔和豉油,並用小火煮一會兒。

5. 將步驟4煮好的材料加入薯泥裏,放在攪拌碗內撈勻。

6. 待材料稍涼,捏成扁球狀,沾少許麵粉與水混合的漿,然後沾適量麵包糠。將沾有麵包糠的薯泥放入熱鍋裏油炸,至金黃色即可。

 

Vegetarian cutlets

Ingredients:

2 potatoes

½ carrot

A handful of frozen green peas

A suitable amount of red onion, garlic, spring onion, ginger and green chili

A suitable amount of fl our and bread crumb

 

Seasonings:

2 tablespoons of soy sauce

Few cardamom, cinnamon and curry leaf

Steps:

  1. Boil and mash the potato. Dice the carrot. Set aside.
  2. Chop the red onion, garlic, spring onion, ginger, curry leaf and green chili.
  3. Put 2 tablespoons of oil into a frying pan and stir fry the ingredients of step 2.
  4. Add in the carrot and the pea. Put in soy sauce and cook for a few moments in low heat.
  5. Mix the cooked ingredients with the mashed potatoes in a mixing bowl.
  6. Wait until cool. Divide and shape the mixture into flat balls and dip each into a mixture of flour and water. Then coat well with bread crumb. Deep fry in oil until golden brown.
