水牛城素雞翼
材料:
急凍猴頭菇 300g
西芹條 60g
甘筍條 60g脆漿材料:
粟粉 150g
麵粉 200g
海鹽 5g
紅椒粉 2/3茶匙
梳打水 1罐
泡打粉 半茶匙
菜油 35g水牛城醬汁材料:
硬豆腐 400g
腰果 50g
檸檬汁 1/2個
辣椒汁 15g
甜椒粉 5g
茄汁 50g
海鹽 2g
黑胡椒碎 少許
食材預先處理︰
急凍猴頭菇解凍後擠乾水分,撕成寬約3cm、長約5cm的條狀;
西芹、甘筍洗淨,切成長約5cm的粗條,放入冰水中浸泡10分鐘,保持脆嫩口感。
調製脆漿與掛餬︰
混合粉類:大碗中放入粟粉、麵粉、海鹽、紅椒粉、泡打粉,用打蛋器攪拌均勻;
調製脆漿:把已混合的粉類加入梳打水和菜油,攪拌至無顆粒狀(梳打水要分次加,避免脆漿過稀,最終呈能掛住勺背的濃度);
掛餬炸製:猴頭菇條放入脆漿中,均勻裹上一層脆漿。油鍋燒至170℃,放入掛餬的猴頭菇,以中火炸5-6分鐘至金黃酥脆,撈出瀝油備用。
水牛城醬汁︰
將所有醬汁材料放入高速攪拌機內,打至幼滑狀,備用。
最後將蔬菜條及猴頭菇配上醬汁同吃。
Vegetarian Buffalo Chicken Wings
Ingredients:
300g frozen lion's mane mushroom
60g celery stick
60g carrot stickCrispy batter ingredients:
150g cornstarc
200g flou
5g sea sal
2/3 tsp paprika powde
1 can of soda wate
1/2 tsp baking powde
35g canola oiBuffalo sauce ingredients:
400g firm tof
50g cashew nut
Juice of 1/2 a lemo
15g chilli sauc
5g sweet paprika powde
50g ketchu
2g sea sal
A sprinkle of ground black peppe
Prepare the ingredients︰
Defrost the lion's mane mushrooms. Squeeze out any excess water. Tear into strips of approximately 3cm x 5cm.
Wash the celery and carrot. Slice into sticks of roughly 5cm long. Soak in iced water for 10 minutes to maintain the crunchiness.
Prepare the crispy batter︰
Mix the dry ingredients: Add the cornstarch, flour, sea salt, paprika powder and baking powder in a big bowl. Mix well with a whisk.
Prepare the crispy batter: Add the soda water and canola oil to the dry ingredients. Mix until no lumps left. (Add the soda water in stages as you mix. Do not add too much water. It is important to reach a thick coating consistency.)
Coat with batter and deep-fry: Coat the lion's mane mushrooms thoroughly with crispy batter. Fill a cooking pot with enough oil and heat the oil to 170ºC. Gently add the coated lion's mane mushrooms. Deep-fry for 5-6 minutes over medium heat until golden and crispy. Take out and drain any excess oil.
Buffalo Sauce︰
Place all the buffalo sauce ingredients in a high-speed blender. Blend until smooth and creamy.
Serve the vegetable sticks and lion's mane mushrooms with the buffalo sauce as a dip.
