自製慕絲 零難度

酸酸甜甜的草莓慕絲,把鮮打的草莓顆粒和淡忌廉混合在一起,讓味蕾感到一抹清新,很適合做餐後甜品。一直都認為做慕絲是步驟繁複的,郭師傅這次示範了很簡單的製法,只見他幾下手勢便把草莓慕斯俐落地完成了。師傅還提供了綠茶和咖啡慕絲的做法,而且可以其他水果替換食譜中的草莓;一次做幾種不同的味道,就是一個味道紛陳的甜品盛宴了。

草莓慕斯

材料 ︰
草莓 450 克
淡忌廉 450 克
糖 150 克
素魚膠粉 52 克
水 550 克
冰粒 適量

做法︰

  1. 草莓留下幾顆作裝飾,其餘放入攪拌機打成果漿。淡忌廉以電動打蛋器打至企身。
  2. 燒開清水,把糖和素魚膠粉煮至溶化,把盛載溶 液的碗放冰粒裏待稍涼,之後倒入草莓果漿略為攪拌,再放入淡忌廉拌勻。
  3. 把步驟 2 的成品舀進小杯內,輕搖杯身至表面平滑,放進冰箱雪至凝固。
  4. 在慕斯杯表面加上淡忌廉及草莓粒裝飾,即成。

溫暖提示︰素魚膠粉以果膠製成,於烘焙店有售。也可以用 250 克的綠茶粉或咖啡粉取代水果分量轉換味道。 

 

Strawberry Mousse 

Ingredients :
450g strawberry
450g whipping cream
150g sugar
52g vegetarian gelatin
550g water Ice cubes

Steps:

  1. Put the strawberries (reserve a few for decoration) into an electric blender and blend to become paste. Whip the cream until stiff.
  2. Boil the water and add in sugar and gelatin to dissolve. Pour the liquid into a bowl and put in on the ice cubes to cool. When cooled, pour in the strawberry paste and mix well. Then put in the whipped cream and stir well
  3. . Pour the mixture of step 2 into the small cups. Shake the cup lightly until the top becomes smooth. Put them into the fridge. It is ready when they are solid.
  4. Add a little whipped cream and strawberry on top to decorate before serving.

Tips: You can buy the vegetarian gelatin, which is made of pectin, in bakery grocery store. You may use 250g green tea powder or instant coffee powder to replace strawberries.
