蒟蒻營養助力家常飯

大根(白蘿蔔)及蒟蒻絲用來煮一個「大根蒟蒻味噌煮」,非常美味,配飯食一流,大家不妨試吓。

 

大根蒟蒻味噌煮

材料:

大根(白蘿蔔) 900g     
蒟蒻絲     1包(放入滾水煮2分鐘,倒出洗淨備用)     
油揚      2-3塊(切件)     
薑       1-2片

味噌煮醬汁:

水       550g    
味噌      50g    
糖       12g    
昆布粉     1茶匙    
醬油      2茶匙    
味醂      2茶匙    
柚子酢     2茶匙    
(以上醬材加在一起攪拌)

做法︰

  1. 將大根去皮(去深少少),隨意切件;

  2. 放入滾水煮20分鐘,倒出洗淨;

  3. 薑片下鑊,以適量米油/油炒大根(可加少許麻油),再加入已處理的蒟蒻再炒一炒;

  4. 倒入味噌煮醬汁後,加入油揚慢火煮20分鐘(適宜蓋上一張已剪孔的Cooking Paper),再關火焗一焗便可品嘗。

 

Miso Daikon Konjac Stew

Ingredients :

900g daikon  
1 pack of shirataki (konjac) noodles (blanched in boiling water for 2 minutes, drained and rinsed)  
2-3 pieces of aburaage (sliced into small pieces)  
1-2 pieces of ginger

Miso sauce ingredients :

550g water  
50g miso  
12g sugar  
1 tsp kombu powder  
2 tsp soy sauce  
2 tsp mirin  
2 tsp yuzu vinegar  
(everything mixed together)

Steps :

  1. Peel the daikon (peel deeper). Chop into pieces.

  2. Blanch the daikon in boiling water for 20 minutes. Drain and rinse.

  3. In a frying pan, add the ginger slices and a drizzle of rice bran oil or cooking oil. (Add a drizzle of sesame oil if you like.) Stir fry the daikon. Add the blanched shirataki noodles. Continue to stir fry.

  4. Pour in the miso sauce and add the aburaage. Simmer over low heat for 20 minutes. (For better results, make some holes on a piece of parchment paper and cover the stew with it.) Turn off the heat and keep the lid on for a while. Ready to serve.
