蘆筍有延年益壽之美譽,其食療價值頗高,有助溶化腎石之神奇功效,除可防癌,更是抗癌先鋒,因為蘆筍含有一種豐富 Histone 的蛋白質和超強抗氧化物質等。其實癌症就是細胞異常增長,而 Histone 剛好是控制細胞正常生長的元素,有撥亂 反正的功效。
以蘆筍入饌的菜式多不勝數,現在先嚐嚐這道 「香芋丸伴蘆筍」。
香芋丸伴蘆筍
材料︰
香芋 300 克
珍珠筍 5 條
香菇 40 克
金菇 100 克
小蘆筍 200 克
調味料︰
椰子油 少量
山茶花油 適量
盤鹽 少許
五香粉 少許
做法︰
- 香菇浸泡後去蒂,瀝乾切幼絲。
- 珍珠筍切圓片。
- 芋頭去皮蒸熟,壓成芋泥,混勻香菇絲及珍珠筍圓片,加 少量椰子油及少許五香粉後,揉成丸狀。
- 蘆筍先用開水浸軟,撈起過冷水,瀝乾後圍圈放於碟上, 芋丸放入圈內,蒸熱備用。
- 金菇切短度,用少許山茶油煎香至金黃色,注入開水,放 入少許盤鹽,勾芡,然後淋在已蒸熱的芋丸蘆筍上即成。
Taro Balls With Asparagus
Ingredients:
300g taro
5 pieces baby corn
40g dried mushroom
100g Enoki mushroom
200g small asparagus
Seasonings:
A little coconut oil
A suitable amount of camellia oil
A dash of salt and fi ve spices powder
Steps :
- Soak the mushroom thoroughly and remove the stalk. Dry and finely shred.
- Slice the baby corn into round shape thin pieces.
- Remove the skin of the taro before steam to become soften. Press the taro to become mash and mix with the dried mushroom and baby corn. Add in a little coconut oil and five spices powder. Then rub to form balls.
- Use boiled hot water to soak the asparagus for a while to soften them. Then soak in cold water. Drain, dry and place them to become circles on the dish. Put the taro balls onto the middle of the asparagus circles. Steam to become hot.
- Cut the Enoki mushroom into smaller pieces. Fry with camellia oil to become golden brown. Put in a suitable amount of boiled water. Add in a dash of salt and corn flour paste to thicken the sauce. Pour the sauce onto the dish. Serve.
