枝豆濃湯
材料(約2人份):
急凍毛豆 150g
菠菜 300g
薯仔 1個
腰果 50g
無糖豆漿 500g
金菇 半包
白菌 10粒
松露油 少許
營養酵母 2湯匙
水 800g
做法︰
預先處理材料:急凍毛豆解凍備用,菠菜洗淨切去根部,焯水30秒後撈出瀝乾。薯仔去皮切小塊。金菇剪去根部、撕成小束。白菌洗淨切片。腰果用溫水浸泡10分鐘;
煮製基礎食材:鍋中加入800g水,放入薯仔塊,大火煮沸後轉小火煮10分鐘,至薯仔軟爛;
混合打餬:將煮軟的薯仔連同煮薯仔的水一起倒入攪拌機,加入毛豆、一半菠菜、浸泡好的腰果、無糖豆漿和營養酵母,啟動攪拌機打成細滑的濃湯餬;
炒香菌菇:另起小鍋,無須加油,放入金菇和白菌,以中火翻炒2-3分鐘,至菌菇出水並略收乾,散發香氣;
組合完成:將打好的濃湯餬倒回鍋中,以中小火加熱至微沸(注意攪拌防黏底),隨後加入炒好的菌菇和餘下菠菜,輕輕翻拌均勻即可關火;
點綴增香:出鍋後,根據個人口味淋上少許松露油提香,即可享用。
Edamame Soup
Ingredients(serves 2):
150g frozen edamame
300g spinach
1 potato
50g cashew nuts
500g unsweetened soy milk
1/2 a pack of enoki mushrooms
10 white button mushrooms
A drizzle of truffle oil
2 tbsp nutritional yeast
800g water
Steps︰
Prepare the ingredients first: Defrost the edamame. Wash the spinach thoroughly and chop off the roots. Blanch the spinach for 30 seconds, then take out and drain. Peel the potato and cut into small pieces. Trim off the roots of the enoki mushrooms and tear into small bundles. Rinse the white button mushrooms, then slice. Soak the cashew nuts in warm water for 10 minutes.
Cook the basic ingredient: Pour 800g water into a cooking pot. Add the potato pieces. Bring to the boil on high heat. Then reduce to low heat and cook for 10 minutes until the potato softens.
Blend into puree: Place the cooked potato together with the water used for cooking it in a blender. Add the edamame, half of the spinach, soaked cashew nuts, unsweetened soy milk and nutritional yeast. Turn on the blender and blend until the mixture is silky smooth.
Stir-fry the mushrooms: Heat a small frying pan. Do not add any oil. Add the enoki mushrooms and white button mushrooms. Sitr-fry over medium heat for 2-3 minutes until the mushrooms release some water. Stir-fry until the water is reduced and the mushrooms are fragrant.
Reassemble everything together: Pour the blended soup back to the cooking pot. Bring to the boil over medium-low heat (stir regularly to prevent burning on the bottom). Add the stir-fried mushrooms and the remaining spinach. Stir gently to mix well. Turn off the heat.
Add some delicate aroma: Dish up. Add a drizzle of truffle oil to your taste. Ready to serve.
