長夏養生要健脾 小米邂逅椰菜花

長夏對應五行的土,與五臟之中屬土的脾相應;五色食物入五臟,黃色食物正是有補益脾胃之效。這道「小米邂逅椰菜花」,以小米養脾化濕,既合時節,搭配椰菜花化身為「土豆泥」,是天然色香味的視覺新食趣!

 

小米邂逅椰菜花

材料(4-6人份):

小米  1杯(用4杯水清洗並浸泡一夜)
過濾水 4杯
椰菜花 1棵(切成小花,莖切細)
南瓜籽 少許
食用花 少許

調味料:

鹽   1/4茶匙

做法︰

  1. 在一個大平底鍋中舖好椰菜花,然後加入小米及其浸泡水。煮沸後加鹽,小火,蓋上鍋蓋,小火燉30-40分鐘;

  2. 關火,讓小米和椰菜花在鍋內靜置10分鐘後再打開鍋蓋;

  3. 打開蓋子,用土豆搗碎機或叉子將穀物和蔬菜搗碎至軟滑,必要時加入少量水,之後放在碗裏;

  4. 最後放少量南瓜籽及把食用花置旁作為點綴。

綿密的小米椰菜花泥模仿了典型的「土豆泥」,是一種營養豐富的蔬食,膳食纖維含量高,熱量低,含有效的抗癌化合物和豐富的硫,支持細胞的自然解毒和氧化。由於椰菜花中含有歐米茄-3脂肪酸和維生素K,有助於防止導致關節炎、慢性疼痛和某些腸道疾病的慢性炎症。

小米以鹼性成分為主,不含麩質,不含小麥,富含鐵、高蛋白和B族維生素;還含二氧化硅,有助保持骨骼健康。小米還可以治療胃、脾或胰腺疾病,具有紓緩的性質,有助於消除胃酸,特別是消化不良或晨吐。

 

The cauliflower millet mash

Ingredients (serves 4-6) :

1 cup of millet (washed and soaked with 4 cups of water overnight)
4 cups of filtered water
1 head cauliflower (cut into small florets and stems finely diced)
1 tsp pumpkin seeds
eatable flowers (garnish)

Seasonings :

1/4 teaspoon salt

Directions :

  1. In a large saucepan, layer in the cauliflower then add the millet with its soaking water. Bring to a boil and add salt, reduce heat to low, cover and simmer for 30-40 minutes.

  2. Turn off the heat and let the millet and cauliflower to settle in the pot for 10 minutes before opening the lid.

  3. Open the lid and mash the grain and vegetable with a potato masher or with a fork until soft and creamy, adding a little water if necessary. Put in a serving bowl.

  4. Garnish with the pumpkin seeds and eatable flowers on top.

Tips :

This satisfying creamy mash mimics the typical "potato mash" but is a much healthier version made with wholegrain millet and cauliflower, that is a nourishing vegetable high in dietary fiber, low in calories, contains potent anti-cancer compounds and high in sulfur which supports natural detoxification and oxygenation of the cells. Because of the omega--3 fatty acids and vitamin K in cauliflower, it also helps to prevent chronic inflammation that leads to conditions such as arthritis, chronic pain, and certain bowel conditions.

Millet is mainly alkaline in content and it is a gluten-free and wheat free with good sources of iron, high in protein and rich in B vitamins. It also contains silica, which helps and keeps our bones flexible in the aging process. Millet is also medicinal in healing for illnesses of the stomach, spleen, or pancreas, with its soothing qualities, helping settle any stomach acids esp. for indigestion or morning sickness.
