八寶冬瓜羹
材料(約4人份):
冬瓜2斤(1斤切粒煮,1斤切粒蒸軟打成茸)
乾冬菇4粒(浸軟切粒)
乾雪耳1朵(浸軟撕小朵)
金菇1包(洗淨切段)
靈芝菇1包(洗淨切段)
新鮮黃耳1朵(洗淨切粒)
甘筍1/3條(切細粒)
夜香花30克水約1,500克調味料:
海鹽適量
原蔗糖 適量
香菇粉 適量
麻油 少許
胡椒粉 少許
生粉 少許
做法︰
一斤冬瓜切粒蒸軟約15-20分鐘,蒸好後 用攪拌機打爛成茸備用;
另一斤冬瓜切粒,與甘筍粒和所有菌類放 入鍋中,用1,500克水煮約30分鐘至軟;
把蒸爛的冬瓜茸加入(做法2)的鍋中,攪 勻再滾幾分鐘,可加入適當的生粉水調節 適當的濃稠度,最後加入夜香花繼續煮1 分鐘至釋出香味;
用海鹽、原蔗糖、香菇粉調味,最後淋麻 油並灑胡椒粉即可。
Winter Melon Mushroom Soup
Ingredients (serves roughly 4):
2 catties diced winter melon(1 catty boiled in water; 1 catty steamed and puréed)
4 dried shiitake mushrooms (soaked and diced)
1 dried snow fungus (soaked and teared into small pieces)
1 pack of enoki mushrooms (rinsed and sliced into sections)
1 pack of shimeji mushrooms (rinsed and sliced into sections)
1 fresh golden ear fungus (rinsed and diced)
1/3 a carrot (finely diced)
30g Tonkin jasmine flowers
1,500g waterSeasoning:
A pinch of sea salt
A pinch of raw cane sugar
A pinch of mushroom powder
A drizzle of sesame oil
A sprinkle of pepper powder
A pinch of corns tarch
Steps :
- Dice one catty of winter melon. Steam for around 15-20 minutes until soft. Place the steamed winter melon in a mixer and blend into purée. Set aside.
- Dice the remaining one catty of winter melon. Boil the winter melon dices, carrot dices, shiitake mushrooms, snow fungus, enoki mushrooms, shimeji mushrooms and golden ear fungus in 1,500g water for roughly 30 minutes until soft.
- Pour the steamed winter melon purée into the cooking pot in step 2. Stir well and simmer for some minutes. You may add some water mixed with cornstarch to achieve the desired consistency. Add the Tonkin jasmine flowers and cook for one more minute until fragrant.
- Season the soup with a pinch of sea salt, raw cane sugar and mushroom powder. Finish off with a drizzle of sesame oil and a sprinkle of pepper powder. Ready to serve.
